Sweet Potato Pineapple Rings Recipe

Ingredients

2 cups cooked, mashed sweet potatoes (or yams, or pumpkin)

2/3 cup packed brown sugar

1/4 cup melted butter

1/2 cup orange juice

1 tsp Pumpkin Pie Spice (or ground ginger, mace, & allspice mixture)

1 tsp grated orange peel

1/4 cup chopped pecans

1/2 cup raisins

1 (16 ounce) can sliced pineapple

Miniature marshmallows

Directions

Combine the sweet potatoes, brown sugar, butter, orange juice, pumpkin pie spice, orange peel, pecans, and raisins, mixing well.

Drain the pineapple slices and place them in a large, shallow baking dish (or two). Mound about 1.3 cup of the sweet potato mixture on top of each pineapple slice. NOTE: Can be made ahead to this point and baked later.

Bake in a preheated 375 F oven for 20 minutes. Top with marshmallows and bake about 5 minutes longer, or until golden and gooey good!
