I got this recipe from a friend when I was stationed in Beaufort SC in 1978. My family loves this. It can be adapted to feed a large crowd

Ingredients
  • 2 - 3 slices fat back, cut into small pieces, fried
  • 2 smoked sausage (I use kielbasa) cut into small pieces, fried
  • 1 chicken cut into pieces
  • 1 - 1 1/2 cups rice

Directions
  1. Add enough water in a pot to cover a cut up chicken. add salt and pepper. cook until done
  2. add the rice plus enought water to cook the rice. I start with one cup of rice and watch as it is cooking to add either more water or more rice.
  3. add sausage and fat back
  4. cook on low until rice id done, about 30 minutes.
