How to make it

  • Preheat oven to 220 degrees, fan oven 200.
  • Place the potatoes on a baking tray, drizzle over the olive oil and sprinkle the salt, then use your hands to rub it in all over the skins,
  • Bake for about 40 mins or until tender.
  • Whilst the potatoes cook, mix the creme fraiche, cheese and chives together with salt and pepper to taste. Chill until required.
  • Remove potatoes from the oven, cut a cross in the top of each and fluff up the flesh.
  • Place potatoes back on baking tray and spoon a little filling into each.
  • Return to the oven for 5 minutes before serving,
