Baked Stuffed New Potatoes

- 700g new potatoes, scrubbed shopping list
- A little oil shopping list
- A little sea salt and freshly ground black pepper shopping list
- 6 tbsp creme fraiche shopping list
- 100g Seriously Strong cheddar cheese, grated shopping list
- 3 tbsp freshly chopped chives shopping list
How to make it
- Preheat oven to 220 degrees, fan oven 200.
- Place the potatoes on a baking tray, drizzle over the olive oil and sprinkle the salt, then use your hands to rub it in all over the skins,
- Bake for about 40 mins or until tender.
- Whilst the potatoes cook, mix the creme fraiche, cheese and chives together with salt and pepper to taste. Chill until required.
- Remove potatoes from the oven, cut a cross in the top of each and fluff up the flesh.
- Place potatoes back on baking tray and spoon a little filling into each.
- Return to the oven for 5 minutes before serving,
