Ingredients

6 large zucchini cut in 1" cubes

4 medium potatoes cut in similar cubes

2 eggplants cut in cubes

1 can stewed tomatoes

4 cloves garlic crushed

1 onion cut in large chunks

2 bay-leaves

1/2 cup olive oil

1/4 teaspoon nutmeg

1/4 teaspoon thyme

1/2 teaspoon salt

1 teaspoon freshly ground black pepper

Directions

Arrange all ingredients in baking pan and mix well.

Bake at 350 for 1 hour.

Add water as needed to keep it from drying out.

Cool before serving.
