This is a great way to eat sweet potatoes. The crunchy tops makes it extra special. They are very creamy and very impressive. My family loves this recipe and we have it often. It's also a holiday msut

Ingredients
  • 3 cups mashed cooked sweet potatoes
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 eggs beaten
  • 2-1/2 teaspoons melted butter
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • Crunch Topping:
  • 2 1/2 tbs. butter
  • 1 cup brown sugar
  • 1/3 cup plain flour
  • 1 cup chopped pecans

Directions
  1. Mix all ingredients together and pour into a greased baking dish.
  2. Cover with crunch topping and bake at 350 for 35 minutes.
  3. Make crunch topping by melting butter then adding brown sugar, flour and pecans and mixing well.
