Spicy Tofu With Minced Turkey Recipe
This recipe originally called for minced pork. The ground turkey reduces the fat content. It is still high in sodium, due to the salted black beans.

Ingredients
  • 1/2 cup chicken broth
  • 1 Tbl. soy sauce (low sodium)
  • 2 Tbl. cooking oil
  • 3-4 chinese hot peppers (or dried hot red peppers)
  • 1 large clove garlic, minced
  • 2 Tbl. salted black beans, chopped
  • 8-12 oz. ground turkey
  • 1 lb. Tofu, drained and cubed (pressed, if desired)
  • 1 Tbl. cornstarch
  • 1 Tbl. soy sauce (low sodium, if possible)
  • 1/4 cup water

Directions
  1. Combine soy sauce, cornstarch, and water; set aside.
  2. In wok or large skillet heat oil over medium-high heat.
  3. Add peppers and cook until browned.
  4. Add garlic and stir-fry 20-30 seconds.
  5. Add turkey and black beans.
  6. Stir-fry until pink color is gone.
  7. Add broth and tofu; bring to a boil and then simmer for about 2 mins.
  8. Stir in cornstarch mixture and bring to a boil.
  9. Add more water to thin sauce and remove peppers if desired.
  10. Serve immediately over hot rice.
