This can be served with breakfast or AS breakfast. Yum.

Ingredients
- 3 eggs
- 1 cup vegetable oil
- 1 1/2 cups sugar
- 3 tsp vanilla
- 2 cups grated zucchini
- 3 cups flour
- 1 tsp salt
- 3 tsp cinnamon
- 2 tsp baking soda
- 1/4 tsp baking powder
- 1 cup chopped nuts
Directions
- Beat eggs, add sugar, oil and zucchini
- Add dry ingredients
- Add vanilla and nuts
- Pour into two large (or 3 small) greased bread pans
- Bake at 350 for 60 min.
