Beer Cheese Chowder

- 1/4 cup butter shopping list
- 1/2 #grated cheddar cheese shopping list
- 1/2 cup flour shopping list
- 1 1/2 quarts hot beef broth shopping list
- 1/4 tsp dry mustard shopping list
- 1/2 cup finely chopped onion shopping list
- 1/2 cup finely chopped celery shopping list
- 1/2 cup finely chopped carrot shopping list
- 1/4 cup finely chopped fresh parsely shopping list
- 1 1/2 pints warm beer shopping list
- worcestershire sauce (to taste) shopping list
- salt and pepper (to taste) shopping list
How to make it
- In large saucepan melt butter and stir in flour.
- Cook until golden brown.
- Add hot broth and bring to a boil, stirring constantly.
- Add vegetables and cook for 20 minutes.
- Stir in cheese until melted.
- Add dry mustard.
- Add beer and bring mixture just to boiling point.
- Season.
