How to make it

  • In large saucepan melt butter and stir in flour.
  • Cook until golden brown.
  • Add hot broth and bring to a boil, stirring constantly.
  • Add vegetables and cook for 20 minutes.
  • Stir in cheese until melted.
  • Add dry mustard.
  • Add beer and bring mixture just to boiling point.
  • Season.
