Beer Cheese Chowder Recipe

Ingredients
  • 1/4 cup butter
  • 1/2 #grated cheddar cheese
  • 1/2 cup flour
  • 1 1/2 quarts hot beef broth
  • 1/4 tsp dry mustard
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped carrot
  • 1/4 cup finely chopped fresh parsely
  • 1 1/2 pints warm beer
  • Worcestershire sauce (to taste)
  • Salt and pepper (to taste)

Directions
  1. In large saucepan melt butter and stir in flour.
  2. Cook until golden brown.
  3. Add hot broth and bring to a boil, stirring constantly.
  4. Add vegetables and cook for 20 minutes.
  5. Stir in cheese until melted.
  6. Add dry mustard.
  7. Add beer and bring mixture just to boiling point.
  8. Season.
