Mexican Dinner Recipe
I made this up one day when I was newly married and poor. We still love it. Everything is approximate, according to your taste and what you have on hand.

Ingredients
  • 1 pkg. Spanish rice mix
  • 1lb ground beef
  • 1 jar salsa (to taste and consistancy)
  • shredded cheese
  • chopped onion
  • water
  • 1 can chopped tomatoes (as needed)
  • corn to taste
  • bell pepper to taste
  • garlic
  • cumin
  • chili powder
  • hot sauce to taste
  • Sour cream

Directions
  1. Cook rice mix according to directions.
  2. Cook and crumble ground beef until done. Drain.
  3. If you like onions, bell pepper or corn, saute them.
  4. Add ground beef to rice. Add spices and veges to taste.
  5. Add enough salsa and/or canned tomatoes to make it as saucy as you'd like.
  6. Sprinkle with cheese.
  7. Serve with a dollop of sour cream.

I will try this. It sounds good.


This is really good! My kids loved it (3 and 15 months - it's hard to find something that gets them to clean their plates but this was awesome!) Even my husband loved it.

You must have been rich when you were poor! And more creative than I was 27 years ago when I was newly married and poor! We used to have spaghetti with "sauce" made from dollar store ketchup and spices!
