This is the most tasty sauce,good served over roast fish or as a side dish.Simple and quick to make.

Ingredients
  • 2 Tblsp (1/4 stick ) butter
  • 2 large cloves garlic,minced
  • 1 3/4 lbs zucchini,trimmed,cut into 1/3 thick rounds
  • 4 Tblsp chopped fresh cilantro
  • 1/3 cup whipping cream

Directions
  1. Melt butter in heavy large skillet over medium heat.Add garlic and saute 10 seconds.Add zucchini and 2 tablespoons cilantro;saute until zucchini is crisp tender,about 5 minutes.Add cream and simmer juices thicken slightly,about one minute.Season with salt & pepper,sprinkle remaining cilantro on top.
