Broiled chicken with wine

- 2 lb broiler or large cornish game hen shopping list
- 1 lemon (you can use lemon juice here but fresh is best) shopping list
- 2 tbl butter shopping list
- salt and pepper to taste shopping list
- paprika shopping list
- 1 cup dry white wine (use a wine you would drink always in any recipe) shopping list
- thyme shopping list
- rosemary shopping list
How to make it
- Cut the chicken in half down the breast bone
- Cut off excess fat from the butt
- squeeze lemon juice over the inside of the chicken and let stand 15 minutes.
- turn chicken over and squeeze lemon juice on the skin of the chicken and rub the pulp on the skin
- let stand 15 minutes
- heat butter in a flat baking pan, skin side up and sprinkle with salt, pepper and paprika
- bake in a hot oven 500 degrees F for 5 minutes
- mix wine and rosemary and thyme together and slowly pour over chicken
- return to oven for 5 minutes more
- reduce heat to 325 degrees f and cook for 20 minutes basting from time to time
- if chicken does not have a lot of fat, add more white wine.
