How to make it

  • Cut the chicken in half down the breast bone
  • Cut off excess fat from the butt
  • squeeze lemon juice over the inside of the chicken and let stand 15 minutes.
  • turn chicken over and squeeze lemon juice on the skin of the chicken and rub the pulp on the skin
  • let stand 15 minutes
  • heat butter in a flat baking pan, skin side up and sprinkle with salt, pepper and paprika
  • bake in a hot oven 500 degrees F for 5 minutes
  • mix wine and rosemary and thyme together and slowly pour over chicken
  • return to oven for 5 minutes more
  • reduce heat to 325 degrees f and cook for 20 minutes basting from time to time
  • if chicken does not have a lot of fat, add more white wine.
