Broiled Chicken With Wine Recipe

Ingredients
  • 2 lb broiler or large cornish game hen
  • 1 lemon (you can use lemon juice here but fresh is best)
  • 2 tbl butter
  • salt and pepper to taste
  • paprika
  • 1 cup dry white wine (use a wine you would drink always in any recipe)
  • thyme
  • rosemary

Directions
  1. Cut the chicken in half down the breast bone
  2. Cut off excess fat from the butt
  3. squeeze lemon juice over the inside of the chicken and let stand 15 minutes.
  4. turn chicken over and squeeze lemon juice on the skin of the chicken and rub the pulp on the skin
  5. let stand 15 minutes
  6. heat butter in a flat baking pan, skin side up and sprinkle with salt, pepper and paprika
  7. bake in a hot oven 500 degrees F for 5 minutes
  8. mix wine and rosemary and thyme together and slowly pour over chicken
  9. return to oven for 5 minutes more
  10. reduce heat to 325 degrees f and cook for 20 minutes basting from time to time
  11. if chicken does not have a lot of fat, add more white wine.
