A different kind of side dish that goes well with just about any casual dish you make.

Ingredients
  • 3 large sweet potatoes
  • 1/4 cup light oil ( i use walnut)
  • 1/4 cup curry powder
  • 1/4 cup grated parmesan cheese

Directions
  1. Preheat oven - 350
  2. Peel and slice potatoes into strips
  3. Mix oil and curry powder in large bowl
  4. Place potatoes in bowl and coat with mixture
  5. Lay out on cookie sheet
  6. Bake until crispy (about 1 hour).
  7. Take out of oven, sprinkle with cheese. Place back in oven for a few minutes so cheese can crisp up.

Made it tonight. Good stuff. I added a bit a sea salt before I cooked them. I cooked them a little too long, but they still tasted great.
