This one's nice served with whatever takes your fancy! An old Good Housekeeping recipe I think!

Ingredients
  • 1 onion, peeled
  • 15g/1/2oz butter or margarine
  • 1 tbsp oil
  • 1 garlic clove, crushed
  • 1 tsp ground cumin (I use nearer 2)
  • 1 tsp ground coriander (I use nearer 2)
  • Large pinch chilli powder (more if you like it hot)
  • 8 chicken thighs
  • 400g/14oz can chopped tomatoes
  • 1 tbsp tomato puree
  • Salt and pepper
  • 2 tbsp parsley, chopped

Directions
  1. Heat the butter and oil in a large frying pan, add the onion and garlic, cover and cook for 4-5 minutes or until the onion is softened.
  2. Add the cumin, coriander and chilli powder and cook for 1 minute stirring continuously.
  3. Push the onion to one side of the pan then, add the chicken and brown on both sides.
  4. Stir in the tomatoes, tomato puree and seasoning.
  5. Bring to the boil, stirring. Cover and simmer gently for about 30 minutes, or until the chicken is tender.
  6. Stir in the parsley and serve immediately.
