Chicken with Spicy Tomato Sauce

- 1 onion, peeled shopping list
- 15g/1/2oz butter or margarine shopping list
- 1 tbsp oil shopping list
- 1 garlic clove, crushed shopping list
- 1 tsp ground cumin (I use nearer 2) shopping list
- 1 tsp ground coriander (I use nearer 2) shopping list
- Large pinch chilli powder (more if you like it hot) shopping list
- 8 chicken thighs shopping list
- 400g/14oz can chopped tomatoes shopping list
- 1 tbsp tomato puree shopping list
- salt and pepper shopping list
- 2 tbsp parsley, chopped shopping list
How to make it
- Heat the butter and oil in a large frying pan, add the onion and garlic, cover and cook for 4-5 minutes or until the onion is softened.
- Add the cumin, coriander and chilli powder and cook for 1 minute stirring continuously.
- Push the onion to one side of the pan then, add the chicken and brown on both sides.
- Stir in the tomatoes, tomato puree and seasoning.
- Bring to the boil, stirring. Cover and simmer gently for about 30 minutes, or until the chicken is tender.
- Stir in the parsley and serve immediately.
