How to make it

  • Heat oven to 425.
  • Melt 6 tablespoons butter (about a 1/3 cup); add to potatoes along with 1/2 teaspoon salt.
  • Press in bottom and up sides of a greased 9" pie plate to form a crust.
  • Bake for at least 20 minutes or until edges are browned. Cool to room temperature.
  • Turn oven down to 350.
  • Saute onion and red pepper in remaining butter until tender, about 10 minutes. Add garlic after 5 minutes.
  • Spoon into crust; sprinkle with cheese.
  • Combine eggs, milk, and remaining salt; pour over onion mixture.
  • Bake about 25 minutes (depending on your oven) or until set.
  • Let stand 5 minutes before serving.
  • Eat 'em up, pardner!
