This recipe makes mashed potatoes a little more dressed up for a special meal. This is a standard for Thanksgiving and Christmas dinner for our family. It is great with gravy or not.

Ingredients
  • 3 Cups Cottage Cheese (small curd)
  • 6 meduim-size Potatoes, cooked and mashed
  • 3/4 Cup Sour Cream
  • 4 teaspoons salt
  • 1 1/2 Tablespoons finely Grated Onion
  • 1/8 teaspoon White Pepper
  • Melted Butter
  • 1/2 Cup Chopped Toasted Almonds (optional)

Directions
  1. Beat Cottage Cheese until slightly smooth.
  2. Blend in mashed potatoes.
  3. Add sour cream, salt, onion and pepper and mix well.
  4. Spoon into well-buttered, shallow 2 quart casserole.
  5. Brush potato mixture with melted butter.
  6. Bake in 350 degree oven for 30 minutes.
  7. Place under broiler until brown, about 4 minutes.
  8. Sprinkle with almonds.
