  • 75 grams Butter 500g
  • 6 tablespoons Castor Sugar 1kg
  • 1 egg Farm Fresh Egg
  • 2 tablespoons White Flour
  • 1 cup Ground Almonds
  • 1/2 teaspoon almond essence
  • 6 fresh apricots, halved, stoned and sliced
  • 25 grams butter (melted)
  • 2 tablespoons lemon juice
  • 2 tablespoons castor sugar

Directions
  1. Preheat the oven to 190 C.
  2. Beat the butter, sugar and egg together until creamy. Fold in the flour, almonds and almond essence.
  3. Line the base and sides of a 20cm metal flan dish with the sweet short pastry. Trim the edges. Prick the base with a fork.
  4. Spread the almond mixture into the flan, making a shallow dip in the centre. Toss the sliced apricots with the melted butter, lemon juice and sugar and pile into the centre of the flan.
  5. Bake in the preheated oven for 25-30 minutes or until the centre is cooked. Serve warm or cold in wedges.
