How to make it

  • Preheat the oven to 190 C.
  • Beat the butter, sugar and egg together until creamy. Fold in the flour, almonds and almond essence.
  • Line the base and sides of a 20cm metal flan dish with the sweet short pastry. Trim the edges. Prick the base with a fork.
  • Spread the almond mixture into the flan, making a shallow dip in the centre. Toss the sliced apricots with the melted butter, lemon juice and sugar and pile into the centre of the flan.
  • Bake in the preheated oven for 25-30 minutes or until the centre is cooked. Serve warm or cold in wedges.
