Ingredients
  • 2 x Acorn squash halved and seeded
  • 1 tbl Melted butter
  • 1/4 tsp Salt
  • 1/4 tsp Ground cinnamon
  • 2 cup Cooked white or brown rice (preferrably cooked in chicken broth)
  • 1 cup Unsweetened applesauce
  • 1/2 cup Finely Chopped celery
  • 1/2 cup Chopped toasted pecans
  • 1/4 cup Packed brown sugar
  • 1/4 cup Finely minced Onion
  • 1/2 tsp Ground ginger
  • 4 sm Apple wedges

Directions
  1. Place squash cut-side down in shallow baking pan.
  2. Bake at 350 F for 30 minutes.
  3. Turn squash cut-side up; brush with butter.
  4. Sprinkle with salt and cinnamon.
  5. Combine rice, applesauce, celery, pecans, brown sugar, onion and ginger.
  6. Fill squash evenly with stuffing.
  7. Bake, uncovered, 20 to 30 minutes.
  8. Garnish with apple wedges.
