How to make it

  • Combine all ingrediants in a large frying pan. Stir over a low heat until sugar is dissolved.
  • Bring to the boil, boil steadily uncovered for ten minutes. Remove from heat. Stir constantly with a fork until sugar crystalizes around peanuts. Turn out and cool on tray.

    I have an amendment to the above:

    •500g Raw Peanuts
    •2 Cups of White Sugar
    •2 Cups of Water
    •1 1/2 teaspoon Red Food Colouring

    1. Except nuts, combine all ingredients as above
    2. Stir on low heat until sugar dissolved
    3. Bring to boil, and boil uncovered for 10 minutes (as above)
    4. Add nuts now, turn off heat and continuously stir until sugar crystalizes
    5. Turn out on tray to cool.

    I found the nuts went a little soggy if they were boiled the whole time. So the next time I will put them in at the end. Also note, they do take ages to dry out properly (6 hrs for me..)
