This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Crawford Estate in Quinlan, Texas in 1982.

Ingredients
  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs unbeaten
  • 2 teaspoons grated lemon peel
  • 3 tablespoons lemon juice
  • 3 tablespoons water
  • 1 cup sifted flour
  • 1-1/2 cups quick or regular uncooked oatmeal
  • 3 teaspoons baking powder
  • 1 teaspoon salt

Directions
  1. Cream shortening gradually adding sugar.
  2. Cream until light and fluffy then add eggs and beat vigorously.
  3. Add lemon juice, lemon peel and water.
  4. Sift together flour, salt and baking powder.
  5. Add sifted dry ingredients and oatmeal mixing well.
  6. Drop from teaspoon onto greased cookie sheet.
  7. Bake at 375 for 15 minutes.
