Ingredients
  • For the pesto...
  • 4 cloves garlic
  • 1 jalapeño, peeled and seeded
  • 1/4 C grated parmesan
  • 2 T pine nuts
  • 3/4 C cilantro, stems and leaves
  • 2 T olive oil
  • 1/4 t salt
  • For the pastry...
  • 1 16 oz bread shell
  • 1/2# raw shrimp
  • 1/2/C finely chopped brie--no rind
  • 1/2 C mozzarella, shredded

Directions
  1. Combine the pesto ingredients in a food processor, blend until smooth.
  2. Spread the pesto on the crust.
  3. Add shrimp, then brie, then mozzarella.
  4. Bake 10 minutes at 450.
  5. Cool 2 minutes before serving.
