Rhubarb Coffee Cake

- 1 1/2 cup packed brown sugar shopping list
- 2/3 cup vegetable oil shopping list
- 1 egg shopping list
- 1 tsp vanilla shopping list
- 2 1/2 cup flour shopping list
- 1 tsp salt shopping list
- 1 tsp baking soda shopping list
- 1 cup milk shopping list
- 1 1/2 cup finely chopped fresh or frozen rhubarb shopping list
- 1/2 cup sliced almonds shopping list

- 1/3 cup sugar shopping list
- 1 tbl butter, melted shopping list
- 1/4 cup sliced almonds shopping list
How to make it
- Beat brown sugar, oil, egg and vanilla until smooth.
- Combine flour salt and baking soda; add to sugar mixture alternately with milk.
- Beat until smooth.
- Stir in Rhubarb and almonds.
- Pour into 2 greased bundt pans.
- For topping, combine sugar and butter; stir in almonds. Sprinkle over batter. Bake at 350 degrees F for 30-35 minutes or test done.
- Top with fresh sweetened strawberries.
