Ingredients
  • 1 1/2 cup packed brown sugar
  • 2/3 cup vegetable oil
  • 1 egg
  • 1 tsp vanilla
  • 2 1/2 cup flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 cup milk
  • 1 1/2 cup finely chopped fresh or frozen rhubarb
  • 1/2 cup sliced almonds

  • 1/3 cup sugar
  • 1 tbl butter, melted
  • 1/4 cup sliced almonds

Directions
  1. Beat brown sugar, oil, egg and vanilla until smooth.
  2. Combine flour salt and baking soda; add to sugar mixture alternately with milk.
  3. Beat until smooth.
  4. Stir in Rhubarb and almonds.
  5. Pour into 2 greased bundt pans.
  6. For topping, combine sugar and butter; stir in almonds. Sprinkle over batter. Bake at 350 degrees F for 30-35 minutes or test done.
  7. Top with fresh sweetened strawberries.
