How to make it

  • Dice onion and heat in large skillet over medium with a small amount of oil until transparent.
  • Add tomato sauce, chiles, and taco sauce.
  • Cover and cook over medium-medium low for twenty minutes, stirring frequently.
  • Meanwhile, shred Colby cheese.
  • Once sauce has thickened, begin stirring in handfuls of cheese, one at a time, until desired texture and taste. Heat thoroughly.
  • Serve immediately with chips.
  • Add fresh chopped scallions for garnish, if desired.
