How to make it

  • Heat oven to 350 degrees.
  • Line baking dish with foil (purely for easy clean-up).
  • Lay out chicken (no need to pound it flat, we are going for fast and easy here people) top with spinach and cheese (1/4 of spinach & cheese if using chicken breasts, 1/8 of spinach & cheese if using thighs).
  • Fold meat over spinach & cheese and pin closed with wooden toothpick. (You do not need to fold the sides of the meat in to completely envelop spinach & cheese, goat cheese will not melt and ooze out so it is ok to see the spinach & cheese)
  • Drizzle olive oil on top of chicken and sprinkle with salt and pepper.
  • Bake for 45 min.
