Banana Oat Bran Muffins Recipe

Ingredients

1-1/2 cups milk

2 tablespoons oil

2 egg whites

2 mashed bananas

2-1/2 cups oat bran

1 tablespoon baking powder

1/2 cup chopped walnuts

1/2 cup brown sugar

Directions

Preheat oven to 350.

Prepare pans.

Combine milk, oil, egg whites and bananas and mix well.

Combine bran, baking powder, nuts and sugar and mix well.

Combine mixtures until just combined.

Spoon into pans and bake for 20 minutes.

I actually thought the recipe was not sweet enough by half, and also a bit bland. Next time I'll add a half more sugar and some vanilla. This time, I also used 2 1/2 bananas but will try 3 bananas next time. Cheers
