Ingredients
  • 1lb boneless skinless chicken breasts, diced
  • 1/2 cup sour cream
  • 5 medium sized baking potatos
  • ranch dressing
  • shredded cheddar cheese
  • 1 large broccoli crown
  • handful baby carrots
  • 2tbs vegetable oil or cooking spray
  • spices of choice
  • bacon bits (optional)

Directions
  1. clean and cut up potatos into small pieces (peel if you want, I leave the skin on)
  2. put in pot to boil
  3. while potatos are boiling cut up chicken and broccoli
  4. steam veggies while frying chicken over medium heat
  5. when potatos are soft, chicken is golden and veggies are done,
  6. put everything except ranch dressing and cheese into the pan
  7. continue cooking for 2 minutes, making sure to smash the potatos
  8. stir in ranch dressing to taste
  9. top with cheddar cheese
