These are good. Anything with shortbread has to be!

Ingredients
  • 1/2 cup butter or margarine
  • 1 cup flour
  • 1/4 cup icing sugar
  • 1/4 cup raspberry jam
  • 2 eggs, well beaten
  • 1 cup brown sugar, packed
  • 1 cup coconut

Directions
  1. Preheat oven to 350.
  2. Cream butter and icing sugar.
  3. Add flour and mix well.
  4. Pat into a well greased 9x9 pan and bake for 5 minutes.
  5. Spread with raspberry jam
  6. Stir together eggs, brown sugar and coconut.
  7. Pour over cake.
  8. Bake 15-20 minutes until top is golden brown.
