How to make it

  • Preheat oven to 400 degrees F.
  • Cut squash in half and remove seeds.
  • Brush exposed squash with olive oil.
  • Roast 45 minutes skin side up.
  • Mix together butter, brown sugar and mustard.
  • Turn squash halves over and put half of mustard mixture into each cavity.
  • Bake for 40 more minutes or until squash is tender.
