Lemon Coconut Muffins

- 1 cup all bran shopping list
- 1-1/2 cups milk shopping list
- 1 lightly beaten egg shopping list
- 2 tablespoons cooking oil shopping list
- juice and grated rind of 1 lemon shopping list
- 1/2 cup coconut shopping list
- 1-1/2 cups self rising flour shopping list
- 1/4 cup caster sugar shopping list
How to make it
- Preheat oven to 375.
- Prepare pans.
- Place bran and milk in a large bowl and allow to stand 5 minutes to soften.
- Stir in egg, oil, lemon juice and rind.
- Combine flour, sugar and coconut.
- Stir dry mix into wet mix until just moistened.
- Spoon into pans and bake for 30 minutes.
