How to make it

  • Peel and slice the bananas diagonally (to expose more surface area) into chunks about an inch or so thick. If the bananas are large, cut them in half first.
  • Combine the two flours, baking soda, salt, coconut milk, sesame seeds, and coconut in a large bowl.
  • Add enough of the water to make a batter, but make sure the resulting mixture is not too thin or it won't adhere properly to the banana pieces.
  • Heat the oil in a large pot to a temperature of at least 360 degrees F. (During the deep frying process, try to maintain this temperature as much as possible.)
  • Toss the banana pieces into the batter and make sure they all get completely coated with batter.
  • Fish out one banana chunk at a time and drop it -- carefully -- into the oil, making certain (1) not to splash any of the hot oil on your hand and (2) that you don't add the pieces too rapidly (which will make the temperature of the oil drop too fast).
  • Deep fry the fritters for about a minute or two, until they turn golden.
  • Remove the fritters with a sieve, slotted spoon, or wire spider to a sheet tray covered with one or two layers of paper towel to drain off the excess oil.
  • Dust the fritters with powdered sugar.
  • (One good way to serve this dessert is to pair two or three fritters with a scoop of vanilla ice cream)
