- 1/4 of a block of medium hard tofu shopping list
- 2 teaspoons vegetable oil shopping list
- 1/2 small onion shopping list
- 1/3 red bell pepper shopping list
- 1/3 green bell pepper shopping list
- any other vegetables, such as: mushrooms, snow peas, broccoli, bamboo shoots, water chestnut shopping list
- 2 teaspoons low sodium soy sauce shopping list
- 1/2 cup instant brown rice (makes one serving when cooked) shopping list
How to make it
- Follow directions on box to cook rice.
- Heat oil in frying pan.
- Cut tofu into 1 inch cubes, and chop all vegetables
- Cook tofu first, browning sides of cubes.
- Next, place in the onions and peppers.
- If using any other vegetable, add them after onions are translucent and the peppers soft. Cook vegetables until the onions are slightly caramelized.
- Turn off heat and add soy sauce. Mix until everything is coated and let cool slightly.
- Place rice in a bowl and place vegetables and tofu over rice.
- Add any seasonings you have, to taste. Try not to add more salt.
- Use the money you saved by making such a cheap dish on some really nice beer, and enjoy it with the meal.
- BE SURE TO DRINK LOTS OF WATER, and fiber pills when needed, to make up for the horrendous things that you are doing to your body.
- Learn to eat better.
