Chicken Picatta

- 4 chicken breasts, boned and split (or boneless thighs) shopping list
- nut (or rice) flour seasoned with salt, pepper, and fresh garlic pressed shopping list
- 1/4 cup butter (or oil of choice) shopping list
- 2 lemons or more to taste shopping list
- 3 ounces capers shopping list
- 1/4 cup fresh parsley shopping list
How to make it
- Pound chicken breasts lightly, dredge in seasoned flour and brown in butter or oil.
- Pour juice of 2 lemons over chicken.
- Reduce heat, cover and cook 8-10 minutes (or until cooked through).
- Add capers and parsley; stir and baste chicken with pan juices.
