Mushroom Pate Recipe
I could become a vegetarian if I found more dishes like this one. It can be served warm as main course or cold with bread as an appetizer. The recipe has been translated from Karolines Koekken, a popular Danish cooking book.

Ingredients
  • 1 dl rice (about 80 g)
  • 500 g mushrooms (champignon), coarsely chopped
  • 3 onions, chopped (about 225 g)
  • 1 clove garlic, chopped
  • 50 g hazelnuts, chopped
  • 1 teaspoon dried thyme
  • 50 g butter
  • 2 eggs (medium size)
  • 1/4 liter of cream
  • 2 teaspoons salt
  • freshly ground pepper
  • Tip: I need to watch my cholesterol so, in most recipes, I usually substitute butter with olive oil and cream with evaporated milk.

Directions
  1. Boil the rice following directions on the package. Let it cool down a bit.
  2. Mix mushrooms, onions, garlic, hazelnuts and thyme.
  3. Melt butter in a big pan and stir fry the mushroom mixture.
  4. Pour the mixture into a bowl.
  5. Add rice, eggs, cream, salt and pepper and mix thoroughly.
  6. Pour mixture in a greased baking dish (about 1 1/2 l) and bake, uncovered, at 175ÂșC for 1 hour.
  7. Serve warm as main course or cold with bread as an appetizer.
