Jicama Fruit Salad Recipe
Jicima is a root vegetable that adds a wonderful crunch. Not an overpowering flavor, but modest.

Ingredients
  • 1 large orange, peeled, sectioned, and sections cut in half.
  • 1 medium sized grapefruit, peeled, sectioned, and sections cut in half.
  • 1/2 pint strawberries, washed, hulled, and sliced.
  • 1 cup cantaloupe ( or favorite melon ), sliced
  • 1 small jicima, peeled and sliced thinly.
  • Dressing:
  • 3 tablespoons orange juice
  • 1 tablespoon agave nectar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon sesame seeds
  • 1/4 cup olive oil ( apricot or pumpkin oil will be fine as well)
  • Freshly ground pepper to taste.

Directions
  1. Place the orange, grapefruit, berries,melon, and jicima in a large bowl.
  2. In a glass jar add the orange juice and agave nectar. Shake well to blend.
  3. Add the mustard and sesame seeds and shake well.
  4. Add oil and pepper and guess what...shake well.
  5. Shake mixture until well blended and slightly thick.
  6. Pour a small amount of dressing over fruit and toss well.
  7. Add more dressing if desired.
  8. Enjoy
