Jicama Fruit Salad

- 1 large orange, peeled, sectioned, and sections cut in half. shopping list
- 1 medium sized grapefruit, peeled, sectioned, and sections cut in half. shopping list
- 1/2 pint strawberries, washed, hulled, and sliced. shopping list
- 1 cup cantaloupe ( or favorite melon ), sliced shopping list
- 1 small jicima, peeled and sliced thinly. shopping list
- Dressing: shopping list
- 3 tablespoons orange juice shopping list
- 1 tablespoon agave nectar shopping list
- 1 teaspoon Dijon mustard shopping list
- 1 tablespoon sesame seeds shopping list
- 1/4 cup olive oil ( apricot or pumpkin oil will be fine as well) shopping list
- Freshly ground pepper to taste. shopping list
How to make it
- Place the orange, grapefruit, berries,melon, and jicima in a large bowl.
- In a glass jar add the orange juice and agave nectar. Shake well to blend.
- Add the mustard and sesame seeds and shake well.
- Add oil and pepper and guess what...shake well.
- Shake mixture until well blended and slightly thick.
- Pour a small amount of dressing over fruit and toss well.
- Add more dressing if desired.
