  • 3 Tbs.sherry or rice wine-I use saki
  • 2 Tbs. vegetable oil
  • 1 Tbs. soy sauce
  • 1 Tbs. brown sugar
  • 3/4 tsp. five- spice powder (ALL ABOVE IS FOR A MARINADE)
  • SEASONING BLEND
  • 1/2 TSP. FIVE-SPICE POWDER
  • 1/4 TSP. DRIED THYME
  • 1/4 TSP. KOSHER SALT
  • 1/4 TSP. FRESH GROUND BLACK PEPPER
  • 4 QUAIL
  • VEGETABLE OIL

Directions
  1. TO MAKE THE MARINADE;MIX ALL INGERDIENTS TOGETHER,VERY WELL.
  2. PUT QUAIL IN A LARGE,HEAVY DUTY PLASTIC,ZIP-LOCK BAG
  3. POUR IN MARINADE AND PRESS OUT ALL THE AIR. SHAKE BAG,VERY WELL TO DISTRIBUTE MARINADE EVENLY OVER QUAIL
  4. REFRIGERATE 1 TO 8 HOURS.REMOVE QUAIL AND DISCARD MARINADE.PAT DRY WITH PAPER TOWELS
  5. LIGHTLY BRUSH WITH OIL.MIX SEASONING BLEND IN A SMALL BOWL AND SPRINKLE OVER QUAIL
  6. GRILL,BREAST SIDE DOWN,OVER INDIRECT,MEDIUM HEAT FOR 15-20 MINUTES OR UNTIL JUICES RUN A VERY PALE PINK(GAME BIRDS JUICES WILL BE SLIGHTLY PINK WHEN DONE,DON'T OVER COOK)
