Upside down Apple Cranberry Pie

- 1/3 cup flour shopping list
- 1/4 cup brown sugar, packed shopping list
- 2 tbsp of butter shopping list
- 1/2 cup dried cranberries (or dried cherries or nuts) shopping list
- 1/2 C. sugar shopping list
- 1 T. cornstarch shopping list
- 1/2 tsp. cinnamon shopping list
- 4 C. sliced and peeled granny smith apples shopping list
- 1 T. lemon juice shopping list
- 1 package refrigerated prepared pie crust for 9" pie (or your own!) shopping list
- Maple icing: shopping list
- 2 tbsp. butter very soft shopping list
- 1/8 c. maple syrup – dark amber or B shopping list
- 3/4 c. confectioner's sugar shopping list
- Beat all the ingredients together until smooth, you want a drizzle consistency shopping list
How to make it
- Pull the refrigerated crusts out of the wrapper and allow to warm up according to package directions.
- Roll out on crust on a floured board to 10 inch circle.
- In large bowl combine white sugar, cornstarch and cinnamon.
- Add apples and lemon juice; toss to coat.
- Place rolled out crust on on foil lined (or greased) cookie sheet with a lip.
- Spoon apples into center of crust, leaving 2" edge.
- Prepare a crumb topping by combining flour, brown sugar and work in the butter with a fork until crumbly.
- Add in the dried cranberries and work until mixed up.
- Sprinkle cranberry and crumb topping over apples.
- Unfold the other crust and place gently over the pile of apples and cranberries.
- Fold up edge of the bottom crust, pinching all the way around until well sealed.
- Cut slits in the top crust about every two inches for steam to escape.
- Bake in 400 degree oven 15 mins.
- Reduce temperature to 350 degrees and bake 35 mins. longer or until apples are tender.
- Cool and then drizzle with maple icing.
