How to make it

  • Combine first 6 ingredients in a small saucepan. Cook over medium heat until mixture
  • begins to boil, stirring often. Remove from heat and set sauce aside.
  • While sauce cooks, cook pasta according to directions, omitting salt and fat;
  • add snow peas to pasta the last 3 minutes of cooking time.
  • Drain and place in a large serving bowl. Add carrots and sauce, tossing to coat.

    You know what? I just made it, with a couple of alterations (I added sriracha sauce for spiciness, a splash of mirin for flavoring, and a tbsp of seasme oil of flavor, but also because I used natural peanut butter, but it was near the end of the jar and had dried out and lost its oil), and I must say that my husband and I both really enjoyed it! However, I would say that this yields 6 servings and not 4, especially if you add a bit of extra snap peas and shredded carrots. Average the two numbers and you get my rating for this dish: a 5. Thank you!

    This is nearly identical to something I eat often! I improvise the spices every time, sometimes adding cumin or garlic powder. I also garnish it with spring onion.
