Almond Fried Rice

- 2 tablespoons oil shopping list
- 3/4 cup green onion -- thinly sliced shopping list
- 1/2 cup red bell pepper -- diced shopping list
- 1 egg -- beaten shopping list
- 3 cups cooked rice -- cold shopping list
- 2 skinless boneless chicken breast shopping list
- 1/2 cup almonds, blanched -- slivered shopping list
- 2 tablespoons soy sauce, low sodium shopping list
How to make it
- Heat oil in skillet over medium-high heat.
- Add onions and pepper.
- Stir-fry for 1 minute.
- Add egg; cook, stirring gently until firm.
- Stir in rice and cook until heated through, gently separating grains.
- Add chicken and soy sauce.
- Just before serving add almonds.
