Fresh Herring Oven-poached Fersk Sild I Krukke

- 1 kg (2 1/4 pounds) fresh herring shopping list
- 1 teaspoon salt shopping list
- 1/2 teaspoon pepper shopping list
- 1 large onion shopping list
- 4-5 black peppercorns shopping list
- 1 bay leaf shopping list
- Note: If you can find juniper berries, then a couple added are a lovely touch. shopping list
How to make it
- Preheat the oven to 150°C (300°F).
- Scale, clean and rinse the fish.
- Bone and cut into fillets.
- Sprinkle fillets with salt and pepper.
- Roll them up, beginning at the tail end.
- Place tightly together in a jar.
- Peel and slice the onion.
- Note: I cut the onion in half and slice half moon shaped pieces.
- Place between and over the herring rolls.
- Sprinkle with peppercorns and place bay leaf.
- Cover with a lid or foil.
- Place the jar on towel (to keep it from moving) in an oven pan.
- Add hot water to reach halfway up on the sides.
- Bake 12 - 15 minutes, until the fish is done.
- Serve directly from the jar with rye bread, boiled potatoes and creamy horseradish, or with sour cream and chives. Always have fresh dill to snip overtop.
