How to make it

  • Preheat the oven to 150°C (300°F).
  • Scale, clean and rinse the fish.
  • Bone and cut into fillets.
  • Sprinkle fillets with salt and pepper.
  • Roll them up, beginning at the tail end.
  • Place tightly together in a jar.
  • Peel and slice the onion.
  • Note: I cut the onion in half and slice half moon shaped pieces.
  • Place between and over the herring rolls.
  • Sprinkle with peppercorns and place bay leaf.
  • Cover with a lid or foil.
  • Place the jar on towel (to keep it from moving) in an oven pan.
  • Add hot water to reach halfway up on the sides.
  • Bake 12 - 15 minutes, until the fish is done.
  • Serve directly from the jar with rye bread, boiled potatoes and creamy horseradish, or with sour cream and chives. Always have fresh dill to snip overtop.
