Elegant SEafood Crepes Recipe
This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Harrelson Estate in Detroit, Michigan in 1984. Source: Better Homes & Gardens 1974

Ingredients
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 tablespoons chopped chives
  • 1/8 teaspoon salt
  • 1-1/3 cups milk
  • 3 tablespoons sherry
  • 7 ounce package frozen crabmeat drained and flaked
  • 10 ounce package frozen cooked shrimp thawed and drained
  • 8 crepes

Directions
  1. Preheat oven to 350.
  2. Melt butter in medium saucepan.
  3. Blend flour, chives and salt into butter.
  4. Gradually add milk and sherry.
  5. Cook over medium heat stirring constantly until thickened.
  6. Add crabmeat and shrimp.
  7. Cook over low heat stirring occasionally until heated thoroughly.
  8. Spread 1/4 cup filling across center of each crepe and roll up.
  9. Place in rectangular baking dish.
  10. Spoon remaining filling down center of crepes.
  11. Bake 10 minutes.
