TRUITE FARCIE AUX CHAMPIGNONS Recipe
This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Harrelson Estate in Detroit, Michigan in 1984. Source: Washington Star 1974.

Ingredients
  • 4 trout
  • 1 slice bacon
  • 1 pound mushrooms
  • 1/2 pound carrots
  • 1/2 pound celery
  • 1 tomato
  • 1 clove garlic
  • 1/4 teaspoon each, oregano, tarragon, nutmeg and parsley
  • 1 bay leaf
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. Wash clean and dry trout.
  2. Chop bacon and all vegetables.
  3. Add seasonings to vegetables and cook until tender.
  4. Let mixture cool then stuff the trout.
  5. Preheat oven to 300 and bake trout for 10 minutes.
  6. Just before serving run briefly under broiler.
