Salmon Florentine

- 16 ounce can salmon shopping list
- 2 packages frozen spinach shopping list
- 1/4 cup butter shopping list
- 2 tablespoons minced onion shopping list
- 1/4 cup flour shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon cayenne pepper shopping list
- 1/2 teaspoon dry mustard shopping list
- 2 cups milk shopping list
- 1-1/2 cups shredded sharp cheddar cheese divided shopping list
- 2 cups cooked rice shopping list
How to make it
- Drain salmon reserving liquid then break into chunks.
- Cook spinach according to package directions and drain well.
- Melt butter in saucepan then add onion and sauté until tender.
- Blend in flour and seasonings then gradually add milk and salmon liquid.
- Cook stirring constantly until thickened.
- Add 1 cup shredded cheese and stir until melted.
- Spread spinach over bottom of shallow buttered dish and add layers of salmon and rice.
- Top with cheese sauce then sprinkle with remaining cheese.
- Bake at 400 for 20 minutes.
