Salmon Florentine Recipe
This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Harrelson Estate in Detroit, Michigan in 1984. Source: Washington Star 1975

Ingredients
  • 16 ounce can salmon
  • 2 packages frozen spinach
  • 1/4 cup butter
  • 2 tablespoons minced onion
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon dry mustard
  • 2 cups milk
  • 1-1/2 cups shredded sharp cheddar cheese divided
  • 2 cups cooked rice

Directions
  1. Drain salmon reserving liquid then break into chunks.
  2. Cook spinach according to package directions and drain well.
  3. Melt butter in saucepan then add onion and sauté until tender.
  4. Blend in flour and seasonings then gradually add milk and salmon liquid.
  5. Cook stirring constantly until thickened.
  6. Add 1 cup shredded cheese and stir until melted.
  7. Spread spinach over bottom of shallow buttered dish and add layers of salmon and rice.
  8. Top with cheese sauce then sprinkle with remaining cheese.
  9. Bake at 400 for 20 minutes.

This sounds wonderful. I use fresh salmon and spinach, and my cheese is direct from the dairy. I can't wait to try it!
