How to make it

  • Drain salmon reserving liquid then break into chunks.
  • Cook spinach according to package directions and drain well.
  • Melt butter in saucepan then add onion and sauté until tender.
  • Blend in flour and seasonings then gradually add milk and salmon liquid.
  • Cook stirring constantly until thickened.
  • Add 1 cup shredded cheese and stir until melted.
  • Spread spinach over bottom of shallow buttered dish and add layers of salmon and rice.
  • Top with cheese sauce then sprinkle with remaining cheese.
  • Bake at 400 for 20 minutes.

    This sounds wonderful. I use fresh salmon and spinach, and my cheese is direct from the dairy. I can't wait to try it!
