Pumpkin-Peanut Butter Bread Recipe
This bread has no Gluten, wheat, corn or milk. The aroma of this bread is wonderful. A healthy GF bread that the kids will enjoy to.

Ingredients
  • 1 egg
  • 1/4 cup chunky or smooth peanut butter
  • 1/3 cup honey
  • 1/2 cup pumpkin
  • 1/4 cup sunflower seed meal
  • 1/4 cup filbert meal
  • 1/2 cup plus 2 Tablespoons brown rice flour
  • 2 Tablespoons arrowroot
  • 1/2 teaspoon baking soda
  • 2 teaspoons arrowroot baking powder ( see my recipes )
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon allspice
  • 1/4 teaspoon salt
  • 1/4 cup chopped nuts or seeds

Directions
  1. Beat the egg well
  2. Slowly beat in peanut butter and honey.
  3. Stir in pumpkin, and set aside for now.
  4. Blend together remaining ingredients and stir into pumpkin mixture.
  5. Spoon into a greased 8 x 4 loaf pan.
  6. Bake at 375 30 - 40 minutes, or until a toothpick inserted in the middle of the loaf comes out clean.
  7. Remove from oven and let sit in pan on a wire rack for 2 minutes, then turn out on rack to finish cooling.
