Pumpkin Black Bean Soup With Curry

- 2 cans pumpkin puree (no added flavors) shopping list
- 3 cans vegetable broth shopping list
- 1 can black beans shopping list
- 1 can diced tomatoes shopping list
- 1 yellow onion chopped shopping list
- 1 cup of whipping cream shopping list
- 1 tablespoon curry powder shopping list
- 1 1/2 teaspoons ground cumin shopping list
- 1/2 teaspoon cayenne pepper shopping list
- 1 teaspoon of allspice shopping list
- 1 tablespoon olive oil shopping list
- chives to garnish shopping list
How to make it
- Heat a soup pot over medium heat. Add oil. When oil is hot, add onion. Saute onions 5 minutes. Add broth, tomatoes, black beans and pumpkin puree. Stir to combine ingredients and bring soup to a boil. Reduce heat to medium low and stir in cream, curry, cumin, cayenne, all spice, and salt to taste. Simmer 5 minutes, adjust seasonings and serve garnished with chopped chives.
