This is a fast and easy stew to throw together that is full of flavor, and is a big hit it the family. Good served with corbread or warm crusty rolls and a tossed salad.

Ingredients
  • 2 cans (15oz each) cooked black beans, rinsed and drained
  • 2 cups water
  • 1 lb boneless ham,cut into 3/4-inch cubes
  • 3/4 lb. Italian dinner link sausage, cut into 1-inch peices
  • 3/4 lb. smoked sausage, cut into 1-inch pieces
  • 1 pint cherry tomatoes, stems removed
  • 1 medium onion, chopped
  • 1 teaspoon red pepper flakes
  • 6 cloves garlic, minced
  • 1/8 teaspoongrated orange peel
  • Cornbread or crusty rolls (optional)

Directions
  1. Preheat oven to 350.F
  2. Combine all ingredients except cornbread or rolls in a large Dutch oven.
  3. Bring to a boil over high heat, skimming foam off if necessary.
  4. Cover; transfer to oven. Bake for 30 minutes; uncover and ake for 30 minutes more, stirring occasonally.
  5. Serve hot with cornbread or rolls, if desired, or cool slightly, then cover and refrigerate overnight (we never can wait that long).
  6. Remove any fat from surface. Reheat over low heat.
