Ingredients
  • 3 large lemons
  • 1 orange
  • 2 cups 80 or 100 proof vodka or grain alcohol
  • 1½ c water
  • 1 c sugar

Directions
  1. Soak the lemons and orange in cold water for 2 hours, dry well. Peel or zest the fruit, removing only the outer peel and leaving the pith on.
  2. Pour the vodka into a clean, wide-mouthed jar. Add the zest, stir. Replace the lid and store in a dark cabinet at room temperature for 72 hours. Place the peeled fruit in a plastic bag and refrigerate.
  3. After the 72 hours, combine the water and sugar in a saucepan. Bring to a boil over medium-high heat, stirring to dissolve the sugar. Turn off the heat.
  4. Juice the reserved lemons and stir ¼ cup of the juice into the water-sugar mixture. Let the mixture cool about 2 hours, then add to the jar with the vodka and peels. Close the jar and return to the cabinet for at least another 36 hours.
  5. After steeping, strain the mixture into clean bottles or jars. Limoncello is best served chilled, so store in the freezer.
