How to make it

  • Soak the lemons and orange in cold water for 2 hours, dry well. Peel or zest the fruit, removing only the outer peel and leaving the pith on.
  • Pour the vodka into a clean, wide-mouthed jar. Add the zest, stir. Replace the lid and store in a dark cabinet at room temperature for 72 hours. Place the peeled fruit in a plastic bag and refrigerate.
  • After the 72 hours, combine the water and sugar in a saucepan. Bring to a boil over medium-high heat, stirring to dissolve the sugar. Turn off the heat.
  • Juice the reserved lemons and stir ¼ cup of the juice into the water-sugar mixture. Let the mixture cool about 2 hours, then add to the jar with the vodka and peels. Close the jar and return to the cabinet for at least another 36 hours.
  • After steeping, strain the mixture into clean bottles or jars. Limoncello is best served chilled, so store in the freezer.
