Ingredients
  • 1/3 cup all purpose flour
  • 1/4 cup finely ground yellow cornmeal
  • 1 1/2 teaspoons ground hot chili powder
  • 1/8 teaspoon salt
  • 1/4 cup (1/2 stick) butter, cut up
  • 1/2 cup sugar
  • 3 Tablespoons light corn syrup
  • 1 Tablespoon lemon juice
  • 1/2 cup hulled pumpkin or sunflower seeds

Directions
  1. Preheat oven to 350°. Line 2 cookie sheets with parchment paper.
  2. Sift flour, cornmeal, chili powder and salt in medium bowl.
  3. Melt butter with sugar and corn syrup in large saucepan over medium heat until sugar is dissolved completely.
  4. Remove from heat and stir in dry ingredients, lemon juice and seeds. Let cool completely.
  5. Form dough into balls the size of walnuts and place on cookie sheets 2 inches apart.
  6. Bake 8-10 minutes or until just golden around the edges.
  7. Transfer to racks to cool
