Broccoli Souffle Recipe

How to make it

  • Preheat oven to 200°C.
  • Heat oil, add chopped onion.
  • Add broccoli rose, bouillon and boil for 15 minutes.
  • Puree.
  • Melt butter, add flour, add lukewarm milk. Remove from stove.
  • Mix egg yolk with cream add to butter mixture also add grated cheese.
  • Season with salt, pepper and nutmeg.
  • Beat egg white and mix.
  • Pour into buttered forms.
  • Bake for 20-30 minutes.
