How to make it

  • Preheat oven to 400
  • First run hot water over the spinach in a colander until it is defrosted
  • Then squeeze it to get the water out.
  • In an oven safe bowl or glass casserole dish microwave the cream cheese for a couple minutes to make soft
  • Then stir together garlic, mayo, artichokes, cheese and dry parmesan (add more mayo if it is too thick)
  • Add the spinach and artichokes and mix well
  • Sprinkle some remaining cheese on top
  • Bake in the oven for 10 to 15 minutes
  • Serve with toasted rye bread or tostitos
