Tuna Patties Recipe
As kids we grew up eating these faster than Mum could cook them (as an adult I now add fresh coriander and a little chilli)

Ingredients
  • Large tin of Tuna strained
  • 6-8 good sized potatoes
  • 1 onion finely diced
  • 2 egg Breadcrumbs
  • 1 teaspoon chopped fresh garlic
  • a pinch of salt and pepper
  • Optional finely diced chilli and a handful of corriander

Directions
  1. Boiled until just tender then drain, when cool combine all ingredients in a mixing bowl except for the breadcrumbs (Add a sprinkling of breadcrumbs to help bind mixture) Wet hands and shape mixture into small patties and then lightly coat in the fresh breadcrumbs. In a heavy based frypan heat a smeared with oil, add the patties and fry until golden on both sides. Garnish with fresh lemon juice squeezed over the top. Serve with veg or salad they are great hot or cold. Watch them magically disappear
