How to make it

  • Cut thin slice from stem end of each tomato and set aside.
  • Scoop out pulp discarding seeds.
  • Chop pulp and set aside.
  • Sprinkle inside of tomatoes with salt and invert to drain.
  • Stir flour into melted butter in small saucepan and cook for 1 minute.
  • Add hot milk all at once.
  • Cook stirring constantly until thickened then add garlic, salt and lemon juice.
  • Fold haddock and peas into sauce.
  • Preheat toaster oven to 350 for at least 2 minutes.
  • Spoon a little chopped tomato pulp into each tomato and fill with haddock mixture.
  • Cover with tomato tops and bake for 20 minutes.
