Creamed Cod In Tomato Cups Recipe
This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Harrelson Estate in Detroit, Michigan in 1984.

Ingredients
  • 8 tomatoes
  • 1 teaspoon salt
  • 3 tablespoons flour
  • 3 tablespoons butter melted
  • 1-1/4 cup milk scalded
  • 1 clove garlic crushed
  • 1 teaspoon salt
  • 1 teaspoon lemon juice
  • 1 pound frozen cod cooked and flaked
  • 1/2 cup frozen peas thawed

Directions
  1. Cut thin slice from stem end of each tomato and set aside.
  2. Scoop out pulp discarding seeds.
  3. Chop pulp and set aside.
  4. Sprinkle inside of tomatoes with salt and invert to drain.
  5. Stir flour into melted butter in small saucepan and cook for 1 minute.
  6. Add hot milk all at once.
  7. Cook stirring constantly until thickened then add garlic, salt and lemon juice.
  8. Fold haddock and peas into sauce.
  9. Preheat toaster oven to 350 for at least 2 minutes.
  10. Spoon a little chopped tomato pulp into each tomato and fill with haddock mixture.
  11. Cover with tomato tops and bake for 20 minutes.
