Creamed Cod in Tomato Cups

- 8 tomatoes shopping list
- 1 teaspoon salt shopping list
- 3 tablespoons flour shopping list
- 3 tablespoons butter melted shopping list
- 1-1/4 cup milk scalded shopping list
- 1 clove garlic crushed shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon lemon juice shopping list
- 1 pound frozen cod cooked and flaked shopping list
- 1/2 cup frozen peas thawed shopping list
How to make it
- Cut thin slice from stem end of each tomato and set aside.
- Scoop out pulp discarding seeds.
- Chop pulp and set aside.
- Sprinkle inside of tomatoes with salt and invert to drain.
- Stir flour into melted butter in small saucepan and cook for 1 minute.
- Add hot milk all at once.
- Cook stirring constantly until thickened then add garlic, salt and lemon juice.
- Fold haddock and peas into sauce.
- Preheat toaster oven to 350 for at least 2 minutes.
- Spoon a little chopped tomato pulp into each tomato and fill with haddock mixture.
- Cover with tomato tops and bake for 20 minutes.
